Survival Soup:  I never let myself run out of survival soup.  I make a fresh pot at least twice a week.  I vary the ingredients for every pot I make so it does not get boring.  Have fun with this recipe! 

Update 5/4/09: I am now taking the meat out of my soup to save a bit on calories.
Update 8/1/09: I put the meat back in!  Gotta have my meat!!!

What you need (you can skip any ingredients you don't like):

1 to 1.5 pounds ground meat (beef, chicken, pork, or turkey... whatever is cheapest!)
4 cans (about 8 cups total) chicken broth (I buy low fat)
1 chopped onion (toss in some chopped garlic too if you like)
1 can beans (black, pinto, soy, kidney, garbanzo, etc... drain and rinse them well)
1/2 cup pasta (buy small pasta like alphabets, orzo, or break spaghetti into pieces)
1 can mushrooms (drained)
1 can water chestnut slices (chop them if you want... I love the crunch!)
2 to 3 cups of any kind of frozen or canned veggies (I always add corn, petite peas, chopped brocolli, and a little frozen spinach.  Then I toss in whatever else I'm in the mood for like lima beans, green beans, carrots, asparagus, diced tomatoes, diced potatoes, cauliflower, turnip... whatever!)
Seasonings: 1 tbsp basil, 1 tbsp paprika, 1 tsp all spice, 1 tsp pepper (or whatever else you want to add)

Cook the ground meat in a skillet, breaking it up into small pieces.  Drain it and rinse it until you don't see any more fat.  Pour the broth into a big pot and add the cooked meat, the beans, all your veggies, the pasta of your choice, and the seasonings.  Just thow it all in the pot!  Bring to a boil then just turn the burner off and let it sit there for about 15 minutes.  IT'S READY TO EAT!!!  Here's a tip... my soup tends to get very thick with ingredients (the pasta swells too) so I always keep extra cans of broth on hand to add to the soup as needed.  You can also add extra seasoning if you add extra broth.



Salsa Dip:  Mix 1/4 cup sour cream (I use real but you can use lite or fat free) to 3/4 cup any salsa.  This is a great dip for veggies and it also makes a good salad dressing!  You can also add a bit of mayonnaise (real, lite or fat free) for more of a salad dressing taste.


Perfect Parfait:  I eat this delicious dessert with absolutely no guilt!  I probably eat a bit more of it than I should, but hey, as long as I'm losing weight I will eat this to my heart's content!

Update 5/4/09: I'm trying to stay away from sugar free so I will stop making this dessert unless I absolutely have to have it!

2 boxes of sugar free pudding mix (buy 2 different flavors)
4 cups skim milk (to make the pudding)
2 boxes of sugar free jello (buy 2 different flavors)
1 tub of fat free whipped cream
1 jar of sugar free jelly (any flavor)
Flavored extract (optional)

Prepare the puddings and jello according to the package.  Thaw the whipped cream and flavor it with extract if you want (almond is delicious but so is lemon, pineapple, coconut, rum or you can even add vanilla extract to give it an extra boost of flavor!  Just add about a teaspoon to the cream and blend it well with a spoon).  When the jello sets it's time to make your parfait.  Take any clear glass and fill it with alternating layers of pudding, whipped cream and jello (be generous with the jello, just spoon it in).  Then top it off with more whipped cream and some jelly (I thin my jelly with a bit of water and drizzle it on top just to make it extra pretty).  This dessert is not only delicious but beautiful too!  Make a bunch in advance and have them ready to grab whenever you need a treat!  If your two puddings or jello flavors are the same color tint one with food coloring for variety.  Your dessert should be as colorful as possible!  If you want a really, really big parfait just use lots of jello and less pudding and cream.  You can eat unlimited amounts of sugar free jello so pile it on!
